Colcannon is a popular Irish potato dish although not as widely eaten as Champ or Poundies but it is equally delicious.
Traditionally it is eaten at Halloween as the eating of meat was not allowed and was used as a way of telling someone’s fortune. The idea was to wrap a miniature thimble, a ring, a miniature horseshoe, a button and a silver sixpence in white paper these items were then dropped into the prepared dish and stirred in through the mixture.
The Colcannon was then served and whoever got a little parcel would then know their future as each item had a meaning as follows; the ring-you will marry or if already married will continue to be happy, silver sixpence-wealth, horseshoe-good luck, thimble-you would be a spinster and the button- a bachelor.
Whatever the outcome of the fortunes Colcannon is still a very tasty dish and enjoyed by all.
Ingredients for Irish Colcannon
- 1 ½ lbs potatoes
- 1 ½ cups of milk
- 1 ½ cups of boiled green cabbage or curly kale (I prefer the kale)
- 1 tablespoon butter
- Salt and pepper to taste
Some folk will also add green onion which is commonly used with the recipe for Champ.
How to make Colcannon
- Boil the potatoes until tender.
- Drain well.
- Mash the potatoes well.
- Toss the cooked cabbage or kale in the melted butter.
- Add the cabbage or kale and butter to the potatoes and fold well.
- Season with the salt and pepper to taste.
